Super Summer Kale Salad


I fell in love with my local store's Superfood Salad as they call it and knew it was too good not to share the recipe!

Ingredients:
1/3 C white sugar
1/2 C vinegar
1/4 C extra-virgin olive oil
1 bunch Kale
8 ounce package frozen shelled edamame thawed
1/4 red onion sliced thin
1 C shredded carrots
2/3 C fresh blueberries
1/2 C sweetened dried cranberries
1/2 C cashew pieces
1/2 C sunflower seeds

Directions:
1. Whisk sugar, vinegar, salt, pepper, and olive oil together in a bowl until sugar is dissolved. set aside.
2. toss kale, edamame, red onion, carrots, blueberries, cranberries, cashew pieces, and sunflower seeds together in a bowl. Pour about half the dressing over the mixture and toss to coat. cover bowl with plastic wrap and refrigerate 4-6 hours. serve remaining dressing on side.
