Skinny Shrimp Scampi with Zucchini Noodles
You will need:
2 Tbsp olive oil
1 lbs jumbo shrimp
1 tbsp minced garlic
¼ tsp crushed red pepper flakes
¼ cup white wine
2 tbsp fresh lemon juice
Zucchini Noodles from 2 med zucchini
Himalayan Salt and White Pepper to taste
Directions:
Sauté garlic and pepper flakes in the olive oil over medium heat for a minute stirring constantly. Add the shrimp to the pan, stirring occasionally until shrimp is pink. Season the shrimp with Salt and Pepper to taste. Remove from pan with a slotted spoon, leaving the liquid and set aside.
Add the white wine, and lemon juice to the pan, deglaze the pan. Cook the liquid for 2 minutes and then add in the zucchini noodles. Cook for another 2 minutes and then add the shrimp back in.
Season with salt and pepper and enjoy.
