Easy Crock-pot Chicken fajitas

Who doesn't love Mexican food? I don’t know anyone. Honestly, I could eat it every night. I discovered an easy way to make fajitas in the crock-pot. The best part is all the flavors really cook well together. And leftovers are even better. We were so hungry the day I made these that I forgot to take a finished product picture. But you can imagine they were very yummy!
Here’s what you’ll need to make this quick, weeknight supper of Easy Crock-pot Chicken Fajitas: 

  • 1 lb of Chicken Breasts
  • 3 Peppers (Green, Red, and Yellow), sliced
  • 1 Onion, sliced
  • 1 Package of Taco Seasoning
  • Flour or corn tortillas
  • Toppings – sour cream, cheese, guacamole, etc.


Instructions:
  1. Slice peppers and onions then place them on the bottom of the crock pot
  2. Put Chicken on top of peppers and onions
  3. Sprinkle taco seasoning on the top
  4. Cook on low for 6-8 hrs (or high for 3-4)
  5. Shred everything up and mix together. Serve with tortillas and all the toppings – sour cream, guacamole, cheese, lettuce, etc

Eggplant Pizza

This puts a whole new spin on veggie pizza! Add some grilled chicken if you like!


EGGPLANT PIZZA
Yield: 20-24 pizzas
INGREDIENTS:
2 large eggplant, sliced 1 inch thick
24 oz jar tomato sauce
20 slices provolone cheese, mozzarella works too
3-4 oz fresh cherry tomatoes, sliced
1 cup fresh spinach
1/2 tsp himalayan salt
Pepper flakes, optional

DIRECTIONS:
Preheat your oven to 425 F. In two baking trays arrange the sliced eggplants. Sprinkle the Himalayan salt and bake for 15-20 minutes.
Remove the bake eggplant from the oven and turn your broiler on. Spread 1 tablespoon of tomato sauce over each eggplant round followed by one slice of provolone. Arrange some fresh spinach and cherry tomatoes over the cheese and broil for 3-5 minutes. Make sure you keep a close look while the eggplant is under the broiler as they can burn really fast.

Sooo Good! I will be making these again!

CountDown To Cancun


I am officially 3 weeks away from our Team Beachbody Success Club Trip to Cancun.  I earned this trip for free because I hit Success Club each month last year!  So Steve and I get to hit up the beach with some of our very best friends that we have made through this business!  But that also means that we are with 2,000+ other Beachbody Coaches and their families too!  That is some serious motivation to get my booty in gear!!  I just finished a round of the 21 Day Fix, but i'll be honest, I didn't give it 100%. But today I am ready to go ALL IN!





I printed out my tracking sheets for the week.  These next 3 weeks I am following the Countdown to Competition meal plan and folowing the T25 workouts.

I decided to go back to T25 because I really like the high intensity, sweat pouring from everywhere and feeling like I just had my butt handed to me vs strength training and the slower workouts.  The 21 day Fix extreme totally works and the results are amazing, I just definitely am more of a Shaun T type of girl.  But I still do Autumn workouts because it gives me variety.  So mixing it up keeps my body guessing!  Did you know that every 90 days you should switch up your fitness routine?  If you don't then your body goes into a plateau and you stop making progress.  So make sure to keep your body guessing and change up your weekly routine for maximum results.

My meal plan is basic.  I'm keeping it simple with lots of fresh veggies, lean proteins, staying away from all dairy and cheeses and limiting fruits and carbs.  The carbs I am eating will only be steel cut oats, quinoa, brown rice or sweet potatoes.  The lean proteins will be egg whites, ground turkey, lean fish, flank steak, lean chicken.  No pork or turkey bacon.  For veggies I am sticking to steamed or roasted veggies and the fruit literally is berries or apples.  No bananas or grapes bc they are the highest sugar fruits you can have.

Shakeology is my saving grace and I plan to continue with Shakeology w/water every day! I'm keeping it basic with no extras in my shake unless its spinach or avocado.

My biggest goal other than the food is to drink my water!  I really have noticed my water has been struggling the past few weeks.  If I can get that up  I think I will feel so much better!  So it's game on this week!!!!!  I'll be posting on my Instagram and Facebook Page all week long with workout updates and tips!

We have 11 weeks before Memorial Day, the pools open and school is out.  .  It took me a good 3-6 months to see my body totally transform when I started working out! So my suggestion to you is not to wait much longer!  If you are wanting to get warm weather ready you want to start now!!!
